Anda Bhurji
Anda bhurji or egg bhurji as it is called has a very peculiar sense in its own. You often find anda bhurji ki gaadi outside a MNC or near railway and bus stations. It is the cheapest item a person can sell for a living but the best bhurji wala has a turn over of around 30 to 40 thousand rupees minimum per month. The reason is simple. It fills your stomach, whether at daytime or at night.
Here is my own recipe for this dish...
You need :
3 eggs
2 finely chopped onions
1 finely chopped tomato
1 finely chopped green chilli
1/2 tsp turmeric powder
1 tsp red chilli powder
1/2 tsp garam masala
1/2 tsp kanda lasun masala
Salt to taste
Coriander to garnish
Procedure : Heat oil in frying pan. Add green chillies and onion one by one. Once the onions begin to turn golden brown, add tomato. Shake this mixture well. Add turmeric powder and red chilli powder.
Lower the gas speed. Crack all 3 eggs on the edge of the pan and let them in. Now keep shaking until the egg becomes stern and loose in its own way. Add garam masala, kanda lasun masala and salt and keep stirring till the masala mixes with everything.
Garnish with coriander. Pinch 1/2 a lemon if required. Serve hot with either bread or pav and ketchup.
