Kande Pohe

भिजलेल्या क्ष्णान्ना आठवणींची फोडणी … हळदी साठी असूसलेले हळवे मन अन कांती …

आयुष्य  हे .. चुलीवरल्या कढईतले कांदे पोहे

The above song was may be written with a meaning in mind. Because a Maharashtrian fellow, whether he is from Nagpur, Mumbai, Pune, Jalna, Satara, Sangli, Kolhapur or Belgaum even, Kande Pohe is an all time favourite breakfast item. People may not have vegetables in their fridge, but you will always find pohe in the kitchen.

The strong part of this dish is that you can prepare it in N number of ways. For example, kande pohe, batata pohe, tomato pohe, mutter pohe, dadpe pohe etc. This dish is a major reason of successful marriages. The very famous saying in marathi is - काय मग .. कांदे पोहे कार्यक्रम सुरु झाले का?

So on this note, here is my recipe for this wonderful dish...

You need :

2 cups of Jaad pohe (Sorry I can't translate that :p :p)

2 small onions diced into small pieces

1 diced green chilly

1/2 tsp mustard seeds

1/4 tsp turmeric powder

A handful of roasted peanuts

Salt and Sugar to taste

Red chilly powder to taste (if required)

Grated wet coconut and coriander to garnish

1/2 lemon slice

Procedure : Wash the pohe twice very well and drain out all water possible and keep aside for 10 min for them to get nice and fluffy. Heat a kadai and add oil. Add it only in proportion with your pohe, not too less not too much. After the oil heats up, add mustard seeds. Once they start to pop up and turn brownish, add green chilli and diced onions one by one.
Once the onions start to turn golden brown, add turmeric powder and stir it a bit. Now add the pohe and mix the entire thing well. Add salt, sugar, red chilli powder and peanuts. Shake everything well and do not let it form a lump. After shaking for about 5 min, pinch the lemon and garnish the pohe with coriander and coconut. Serve hot.
